Our refreshingly rare rosé is made from our Cabernet Cortis grapes, all hand-picked from our very own private vineyards in Shropshire. We find nothing compliments it better than a generous bruschetta board piled high with everything from prosciutto, red pepper sauce, pea pesto and much, much more. So, open the doors (and a few bottles) and let the good times flow.
2020 Sparkling Rosé Wine
Winemakers Notes
Sparkling Rosé 2020
A pale copper/rose gold coloured wine with a fine mousse and steady stream of small bubbles in the glass. A complex and enticing nose of rose petal, dried apricot, baked apple, cranberry fruit cake and ginger spice. A fruit forward, light and elegant fruit quality on the front of the palate, but with a depth to the fruit reflective of extended tank maturation and two years on lees. Full of fresh red and stone fruits like cranberry, white peach and apricot, but with a deeper baked apple and sweet spice adding complexity and richness. A pristine acidity, gently balanced with a low dosage. A long and evolving finish to this wine.
The fresh and fruit forward qualities of this wine make it most suitable for fish dishes, with its depth of flavour allowing it to stand up to richer styles like monkfish or smoked salmon. I’d recommend trying this with a range of medium to strong cheeses, and even some spicey Asian food like Thai fish cakes. I always like sparkling roses with sweeter foods too, especially creamy fruit cakes.
